Banana Bread

Ingredients

3-4 medium size bananas - over ripe bananas are better

11/4 cup all purpose flour/maida

2 eggs

¾ cup to 1 cup sugar - depends on the sweetness of the bananas

1 tsp baking soda

1 tsp vanilla extract or ½ tsp vanilla powder

2 tbsp chopped black raisin or any dry fruits of your choice

½ cup vegetable oil

Method::

1. first preheat the oven to 180 degrees C.

  2. lightly mash the bananas.

  3. grease a loaf pan or cake tin with oil.

  4. sift the flour with the baking soda.

  5. in a bowl whisk the eggs, sugar and oil together till the whole mixture becomes creamy. for about 2-3 minutes.

  6. add the mashed bananas and vanilla and beat again.

  7. now add the sifted flour to the banana mixture.

  8. mix well so that the batter is combined well and is creamy.

  9. pour in the loaf pan or cake tin.

10. bake for 45-50 minutes till done.

11. check for doneness by inserting a toothpick in the center of the banana bread.

12. the toothpick should come out clean.

13. remove the banana bread from the loaf pan or cake tin and cool it on a rack.

14. serve banana bread warm or cold.
